Distillery

Our distillery is the heart of bulk rum production and is equipped with state-of-the-art technology. It was designed and installed by a renowned Indian company, ensuring a highly efficient and precise distillation process. Thanks to this infrastructure, we achieve alcohols with controlled, high-quality profiles, guaranteeing a consistent and versatile product.
As part of our evolution, we incorporated an extraneutral alcohol plant from Europe, allowing us to further diversify our production and achieve even higher quality in our alcohols.

Sugarcane Cultivation

Rum originates in the fields, where rich soils, sustainable practices, and optimal climatic conditions ensure high-quality sugarcane, essential for a unique distillate.

Fermentation

The cane molasses are transformed into alcohol by special yeasts. This process defines the flavors and aromas that will develop, adding complexity to the rum.

Distillation

In this stage, the master distiller carefully selects the best alcohols, ensuring purity and quality, essential foundations for aging.

Aged in Oak Barrels

To achieve the highest quality, we are committed to strictly adhering to specification requirements, hygiene, and safety standards throughout the production processes by implementing the Best Manufacturing Practices.

Successfully meeting the requirements of the various applicable current Technical Standards, as well as the requirements and commitments made with our clients, by implementing analytical and organoleptic controls of our raw materials, products in the production process, and final products at different stages of our production process.

Additionally, we have a team of highly trained Sensory Analysts responsible for verifying and ensuring the sensory conformity of our alcohols (unaged, aging, and aged) at all stages of production.

We manage traceability through an inventory management system, where each barrel has its own digital identification connected to the system, facilitating control and traceability in a transparent manner.

Aging in Barrels

We carefully carry out aging in premium American White Oak barrels (ExBourbon) with a capacity of 200 liters, a size that offers greater wood contact with the alcohol, ensuring the best organoleptic profiles.
