Christmas Panna Cotta with Providencia Sugar

Ingredients

For the panna cotta

  • 500 ml of heavy cream
  • 150 ml of milk
  • 100 g of Providencia Sugar
  • 1 teaspoon of vanilla
  • 1 strip of orange peel
  • 1 small cinnamon stick
  • A pinch of nutmeg
  • 8 g of unflavored gelatin
  • 3 tablespoons of cold water (to bloom the gelatin)

For the Christmas sauce:

  • 200 g of red fruits (fresh or frozen)
  • 60 g of sugar
  • 1 tablespoon of orange juice
  • A pinch of cinnamon
  • 1 strip of orange peel
  • 1 small cinnamon stick
  • A splash of liqueur, such as amaretto
  • 8 g of unflavored gelatin
  • 3 tablespoons of cold water (to bloom the gelatin)

Decoration:

  • Edible Christmas leaves or bells

Step-by-Step Preparation

1. Infuse the panna cotta base

  • In a saucepan, combine the heavy cream, milk, Providencia Sugar, orange peel, cinnamon, and nutmeg. Heat over low heat without boiling, allowing the spices to release their festive aroma.

2. Bloom the gelatin

  • In a small bowl, combine the unflavored gelatin with cold water. Let it sit until it absorbs all the water and reaches a thick texture.

3. Incorporate the gelatin

  • Remove the cream mixture from the heat, discard the orange peel and cinnamon stick, and add the bloomed gelatin. Stir well until completely dissolved.

Prepare the Christmas Sauce

5. Cook the red fruits

  • Once cooled, pour the sauce over each panna cotta and decorate with edible Christmas leaves or bells.

Christmas Decoration

Decorate the cake with Christmas flowers, powdered sugar, or a light glaze to give it a festive and elegant touch.

 

Tips for a Perfect Panna Cotta

  • Do not let the mixture boil; this can affect the final texture.
  • For a firmer panna cotta, add 1–2 g of extra gelatin.
  • For a more intense aroma, let the spices infuse for 10 minutes before adding the gelatin.
  • You can replace the red fruits with mango or peach for a tropical version.
